For those looking for the ideal accompaniment for meat, fish and pasta dishes, the summer truffle brings a delicate flavour and scent, and is milder than the Perigord truffle.
This true delicacy, produced by the earth, is collected during the summer between May and August, at between 200 and 1000 metres above sea level. Its outer form is very similar to the melanosporum truffle, but it has a more pronounced pyramidal crust while the inside is cream-coloured with hazel tones.
